It's been quite a while since I wrote a blog, and may be quite a while until the next, unless someone who will remain nameless gets violent or offers some alternative 'carrot'.
I need to warm up my blog muscles and brain so I'll do what I do whenever I need warmth, I'll make chai!
Here is a simple recipe for masala chai.
For two cups you'll need...
10 cardamom pods (crushed)
8 whole cloves (crushed)
10 peppercorns (crushed)
1 cinnamon stick (split lengthways into thin strips)
4-5 slices of ginger (squashed)
2 tablespoons of tea or opened teabags
1 cup of water
2 cups of a milk of your choice
sugar or sweetener of choice to taste
First, pour the cup of water into a saucepan and add everything except the tea, milk and sugar. Bring it to the boil, cover and simmer gently for 5-10 minutes.
Turn off the heat and add the tea. Let it steep for a minimum of 5 minutes.
Add the milk and bring to the boil, then simmer while you add the sugar.
Stir well, then drain the chai through a fine sieve or tea strainer into your cups.
Then sit back and warm up and chill out to some Pandit Nikhil Banerjee.
